Fast and Easy in One Pot, Flat Beans and Potatoes

Flat beans and potatoes, braised together in flavourful broth is the perfect addition to your weeknight rotation. It’s an easy dish to put together in less than 30 minutes. Vegans love the hearty vegetable combo but you can also bulk it up with your choice of protein. A personal fave for me is to add 2 or 3 links of sausage meat that’s been removed from the casing and crumbled.

Yields:

4 servings

Ingredients:

  • Onion, 1 large, sliced
  • Tomato, 1 large, sliced
  • Garlic, 2-3 cloves
  • Potato, 6 medium, cut in wedges
  • Flat beans, 6 cups, cut in 1 ½” lengths
  • Fresh thyme, a few sprigs, stems removed
  • Pepperoncini, a handful diced
  • Olive oil, 3 tbsp.
  • Salt and black pepper, to season

What you’ll need:

  • Knife
  • Cutting board
  • Veg peeler
  • Sauté pan or braising pot

What to do:

Prep your mise en place: clean and slice the onion and tomato, peel and garlic, peel and cut the potatoes in wedges, clean and cut the flat beans into 1 ½” lengths, de-stem the fresh thyme, slice the pepperoncini.

Heat oil with whole garlic over medium heat and be careful not to burn. Cook the garlic until soft (at this point you can choose to leave the cracked gloves in as is or give it a mash).

Add in the onion and sweat to slightly soften before adding in potatoes. Season with salt and pepper, stir to coat and cook out for a couple minutes to absorb the aromatics. Add in the tomato, thyme and 6 cups of water. Place the beans on top of the bed of potatoes, cover with lid and let cook for 10 minutes on medium heat.

Uncover the lid, stir to mix the beans into the potatoes and check for liquid volume (if it boils too hard you may need to replenish with more liquid). Cover and continue cooking for another 10-15 minutes until potatoes break apart with fork and beans are soft but still hold shape.

Variation:

If you are adding in sausage meat (which comes highly recommended for meat lovers), you’ll want to remove the meat from the casing and break it apart with your fingers. Add it into the pot at the same time as the potatoes.
