Here is a healthy and vegan friendly recipe for mashed sweet potatoes. Mashed potatoes are the perfect pairing for just about any protein. Grilled meats are complimented by the creamy mash while sauces or gravies join forces with the potato as it soaks up that delicious flavor. However, the cream and butter used for this ultra comforting classic turns this nutritious vegetable into a not so healthful choice.  Instead, I swapped out the heavy cream for a plant-based milk and supplemented butter portion with half plant-based butter and half sesame butter. Sweet potatoes are plenty sweet on their own so I prefer to balance that out with savory flavors. This recipe calls for savory tahini (sesame butter) mixed with earthy notes of cinnamon and nutmeg. Plant based butter and milk in small amounts enhance the natural creaminess of the potato mash. Whether you’re vegan or not, you will need to try this recipe and experience the subtle richness and nutrient packed twist to the traditional mashed potato.

Ingredients:

  • Sweet potato, 2lbs., peeled and cut in ¼ pcs.
  • Salt, to taste
  • Grounded spice blend
    • Garlic, 1 tsp.
    • Nutmeg, ¼ tsp.
    • Cinnamon, ¼ tsp.
  • Tahini, 1 tbsp.
  • Plant based butter, 1 tbsp.
  • Oat Milk, 1/4 cup

Begin with peeling and cutting the potatoes. Do not cut them too small because they will soak up a lot more water that way. I recommend cutting them into quarter pieces. Rinse the potatoes under cold water and drain.

Boil the sweet potatoes in salted water until tender, approximately 15-20 minutes. Drain the cooked sweet potato a mash using ricer or food mill.

Season the mash with salt, garlic powder, nutmeg and cinnamon. Add the tahini, butter and milk. Stir in while hot and mix thoroughly.

Taste and adjust seasoning or texture to the mashed sweet potatoes if needed.
